Discriminative tests are used to determine if sensory differences exist between two or more than two products. Several tests exist. It is therefore important to know what they are used for and what statistical tools are available for the data analysis.

This two-day training session covers the fundamental concepts of sensory evaluation and statistics in the use of discrimination tests. No prerequisite is required.

:: Course Content
Difference tests are the most basic sensory tests to implement and is often part of the preliminary steps of sensory study. They are used when the objective is to assess whether two products are perceived as different or similar.
Despite their simple appearance, several different tests exists. The parameters of the test, namely, the type of test, hypotheses, number of subjects and order of presentation will depend on the context of the study and the products being evaluated and must be chosen with care.
The goal of this training session is to empower participants to become self-sufficient in the choice and use of the different discrimination tests available in sensory evaluation. The advantages and limitations of each test is presented, along with the associated hypotheses tested and parameters to specify. Statistical analysis and interpretation of results is carried out via examples and case studies.
